Briony Hume joins Chef Pete Milosevic in the SMEG Kitchen to learn Pete’s idea of “fast food” a quick, healthy and very tasty stir fry. Within minutes you can happily serve this as an alfresco lunch treat or an evening meal for the family.

MINT AND GINGER PORK WITH STEAMED RICE

INGREDIENTS
400gms pork scotch, finely sliced
4 cloves garlic, finely chopped
2 birdseye chillies, finely sliced
˝ cup bamboo shoots, sliced julienne
50gms ginger, peeled and sliced julienne
6 spring onions, finely sliced
2tbsp castor sugar
1 bunch of mint or coriander, chopped
4tbsp fish sauce

METHOD
• In a large wok heat a little oil and seal pork with ginger, garlic and chilli and stir fry for about 5 minutes.
• Add spring onions, bamboo shoots and toss for 3 minutes, add castor sugar, fish sauce and mint (or coriander) and stir fry for another 3 minutes and serve over steamed Jasmine rice.
