Easy BBQ Ideas - Char-grilled Vegetable Dish

Pete Milosevic returns with Mark Soderstrom to give us some more tips on how to make the most of your Barbecue. This week Pete has a wonderfully simple char-grilled vegetable dish which is ideal as a main course or an accompaniment to any meats or fish.
Ingredients
(any veg can be substituted)
Potatoes
Spanish Onion
Zucchini
Capsicum
Eggplant
Mushrooms
1 can of pureed Tomatoes
1 Lemon, cut in half and placed on grill to caramelise
Method
Drizzle veg with Olive Oil, Cook eggplant, zucchini and capsicum on char-grill, cook other veg on hotplate mixing all the time. Heat pureed tomatoes in saucepan on hotplate. Once all veg is cooked, combine everything together. Add a squeeze of caramelised lemon to the dish and serve.
