BBQ Caramelized Strawberry Pancakes

Olivia Stratton joins chef Peter Milosevic for a Barbecue cook up with a sweet edge. Forget the chops and snags, Pete shows up how easy it is to cook delicious caramelised strawberry pancakes on the Barbecue.
Ingredients -Caramelized Strawberry Sauce
1 Tablespoon butter
1 punnet of hulled strawberries, cut in half (can also substitute with any berry)
2 Tablespoons of Brown Sugar
A dollop of Fresh pouring cream
Squeeze of lemon juice
Ingredients - Pancakes
3 eggs
3 Tablespoons of Castor Sugar
1 ½ cups of Milk (Pete recommends full cream milk)
1 ½ - 2 cups of Flour
2 Tablespoons of melted Butter
½ teaspoon Baking Powder
Method
Add butter to a hot saucepan, wait until butter is starting to melt then add strawberries then 2 tablespoons of brown sugar. Stir to combine until mixture starts to slightly caramelize. Add a dollop of fresh pouring cream and a squeeze of lemon juice, mix and simmer for a minute then take off heat.
To make the pancakes, crack 3 eggs into a bowl and whisk, add 3 tablespoons of castor sugar and continue whisking. Add 1 ½ cups of milk and then spoon in flour gradually (to avoid getting lumps in the mixture). Once mixed pour in melted butter and baking powder.
To cook - Spray low temperature hot plate with non stick cooking oil, then spoon on pancake mixture. Flip pancakes when they look slightly golden on the edges.
To serve - layer pancakes with caramelized strawberry mixture and dust with icing sugar.
