Back at the BBQ - Chevapchichi and Cabbage Salad

These small sausages are hard to say but easy to make! Chef Pete Milosevic joins Leigh McClusky at the BBQ to share his family's authentic Serbian recipe for these delicious and very popular sausages.

CHEVAPCHICHI AND CABBAGE SALAD

INGREDIENTS
300gms beef mince, lean
200gms pork mince, lean
100gms lamb mince, lean
50gms minced onion
1tsp sea salt
1tsp white pepper
25gms garlic, minced
1 egg, beaten
¼ cup olive oil

METHOD
• In a large bowl combine all ingredients and mix well.
• Lightly oil a baking tray, fill a piping bag with mince mixture and pipe long sausages along the length of the tray.
• Using a sharp knife cut 100ml lengths and with damp hands place onto another tray and refrigerate.
• Char grill and serve with cabbage salad.


CABBAGE SALAD - INGREDIENTS

Shredded Cabbage
1/2 red onion, finely sliced
1 clove garlic, finely
1 cup white vinegar
1 granny smith apple, finely sliced
¼ cup extra virgin olive oil
Sea salt
Cracked black pepper

METHOD
• Combine all ingredients in a bowl and serve with chevapchichi.
