Briony Hume joins Chef Pete Milosevic in the SMEG showroom kitchen. Briony sets Pete a task – to come up with a simple idea those “bring a plate’ occasions. Pete’s idea? - simple, tasty and popular Hommus served with baked Pita Bread. The fast and easy recipe contains only a few ingredients, most of which can easily be stored on a shelf in the pantry ready for instant use.
Hommus with Baked Spiced Pitas
Ingredients for the Hommus
2 x 400gm cans of chick peas
2 tsp Cumin
2 Tbls Tahini paste
Juice of 1 lemon
3 cloves garlic
80mls extra virgin olive oil
Sea salt / white pepper to taste
Method
Place all ingredients in food processor & process until smooth.
If mixture is too thick add a little more oil.
Season before serving.
(If using dried chick peas soak overnight in cold water then boil in salted water until tender)
Ingredients for the Pitas
1 pack pita bread
50ml extra virgin olive oil
30gms chilli powder
50gms red paprika
Sea salt
Cracked black pepper
Method
Gently with a sharp knife score each pita into a desired shape.
Brush each pita with olive oil then lightly dust with spices, salt & pepper.
Place on flat trays and place in hot oven until golden brown and crisp.
Allow to cool and break into pieces.
