Wonderful Wintry Dessert - Individual Apple & Rhubarb Crumble

Our resident chef Pete Milosevic from the Stag Hotel is back up at the Hills Market Kitchen - this time creating a tempting winter dessert - Apple & Rhubarb Crumble. Using local Adelaide Hills Apples and fresh rhubarb - this firm family favourite is best served with a dollop of cream or ice-cream.

Individual Apple and Rhubarb Crumble Recipe
Ingredients:
6 Stalks of Rhubarb cut into 2cm lengths
3 medium green apples diced
½ cup of Sugar
2Tbs Butter
2 Cinnamon quills
Method:
1. Pre heat oven to 180C degrees
2. Place butter into a hot pan.
3. Once butter starts to melt, add rhubarb and apple as well as ½ a cup of sugar, and stir.
4. Add cinnamon quills and continue to cook until the sugar caramelises and fruit softens.
Ingredients for Crumble:
1 generous cup of Plain flour
100g cold butter, cubed
1 cup of oats or museli
¼ to ½ cup of white or brown sugar.
Method:
1. To the plain flour add the cold butter and rub together with your fingers.
2. Keep rubbing in flour and the butter until it takes on the appearance of breadcrumbs.
3. Add approximately ¼ to ½ cup of sugar and continue to rub in ingredients.
4. Place 1 cup of oats into the bowl and continue to mix.
To prepare ramekin:
1. Place the rhubarb and apple mix into the individual ramekins, and fill until approximately ¾ full. Leave some room for the crumble.
2. Place crumble on top and put in oven. Cook in a moderate oven for 25 - 30 minutes until the crumble is golden.
Serve with optional cream and a glass of wine!
