Delicious Lamb Shanks served on Garlic Mash

This week we're back up at the Hills Market Kitchen, where our resident chef Pete Milosevic shares his special recipe for perfect lamb shanks with garlic mash! This slow cooked hearty meal is perfect for when it's chilly outside - a time-honoured family favourite.

Delicious Lamb Shanks served on Garlic Mash Recipe

Ingredients
• Lamb Shanks (as many as you need)
• Chopped Mushrooms
• Chopped Onions
• Garlic Cloves peeled and whole
• Strips of Thyme
• Extra thyme leaves
• Balsamic vinegar
• 500ml Beef Stock
• Bottle of Red Wine
• Olive oil
• Flour & Salt & Pepper (to coat shanks)

Method
1. Heat olive oil into large frypan
2. Dust shanks in flour with salt and pepper seasoning added to taste
3. Brown shanks in a hot pan
4. Add onions, mushrooms, garlic, thyme (leaves and bunches); gently toss the mix to allow ingredients to settle.
5. Add a bottle of wine, a good splash of balsamic vinegar and approx. 500ml of beef stock; bring to the boil.
6. Transfer shanks and liquid into a baking tray
7. Cover with alfoil, place in oven for three hours at 170°C
8. Serve on a bed of garlic mash potatoes and garnish with thyme. Enjoy!
